Oatmeal Chocolate Chip Cookies

So I’ve been asked to share some healthy desert and snack recipes! Just as satisfying only better for you, it’s pretty much a win win situation! Plus I promise you all the recipes are tried, tested and delicious!! Today I’m sharing oatmeal cookies made with whole-wheat flour, perfect as a snack or as a desert warmed up with some low fat custard or cream. So here we go:

What you need:

2 cups rolled oats
1/2 cup all-purpose flour
1/2 cup whole-wheat flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons cold-cubed unsalted butter
1/3 cup Splenda Sugar Blend for Baking
2/3 cup packed light brown sugar
1 large egg, 1 egg white
1 tablespoon vanilla extract
1 cup dark chocolate chips
1/2 cup chopped walnuts

What you do:

1) Preheat to 175°C. Line 2 baking sheets with parchment paper.
2) Whisk oats, all-purpose flour, whole-wheat flour, cinnamon, baking soda and salt in a medium bowl.
3) Beat the butter in a large bowl with an electric mixer until blended into a paste. Add both types of the sugar and and continue beating until well combined, the mixture will still be a little grainy.
4)Beat in egg, then egg white, then vanilla. Stir in the oat mixture with a wooden spoon until just moistened. Stir in chocolate chips and walnuts.
5) Form balls of batter, as big or small as you like on a prepared baking sheet and flatten (but don’t let the sides crack). Continue with the remaining batter, spacing the flattened balls 2 inches apart.

Bake the cookies until golden brown, for about 15 minutes, let cool and enjoy!
