Spiced Tea – Masala Chai

Being brought up in an Indian household Masala Chai time occurs every 3 to 4 hours…no I’m not joking! Mum used to make one big saucepan in the morning for everyone, one at lunchtime, naturally one at tea time and sometimes even at night, crazy how we are still not sick of the stuff! Like a latte it is very much milk based but if you love spiced flavours and aromas you will love this speedy take of the Indian masala chai! 

what you need:

a pinch (or 2, because I love cinnamon) of cinnamon powder

a pinch of clove powder

a pinch of ginger powder

a touch of pepper 

3 bags of good quality, black tea

2 cups of milk 

4 teaspoons sugar

what you do: 
1) Grab a saucepan, add in 2 cups of milk and 2 cups of tap water
2) Chuck all the spices into a pestle and mortar and crush and blend as fine as possible. (once you’ve tried this once you may want to make a batch of the spice mixture to store and use later)
3) Add to the milk and water. Add in all other ingredients(sugar and tea bags) and bring it to boil.
4) Once boiled for a few minutes on a medium heat the colour will become darker, take off the hob and pour into cups with a strainer 
5) enjoy! 
I love masala chai when I get home from a hard day of shopping in the blistering cold! When do you love yours?

    No cardomon? I love chai which has peppercorns. Perhaps I would swap ginger for the heartier kick of cardomon 🙂
