Strawberry Shortbread Ice Pops

I’ve gone strawberry mad,(ironically I’m eating Jordan’s Strawberry as I type) but for a good reason, everyone loves juicy strawberries and with them coming into season here is the perfect little treat!

What you need:
1 ½ cup pureed strawberries
½ cup crushed shortbread(you could buy them or you could make them: shortbread lovelies )
2 cups vanilla yogurt

What you do:
1) Puree the strawberries.
2) Place the shortbread in a blender pulse until cookies become fine crumbs.
3) Add crushed Shortbread to the yogurt and mix until combined.
4) To assemble as the seen in the picture, layer the yogurt portion first and let freeze for 30 minutes, once slightly solidified add the strawberry purée.
5) Follow the fourth step leaving 30 minute freezer time between each layer until it reaches the top of the ice-pop moulds.

If you haven’t got the time or patience to make the layer then simply pour each layer on top of one another without any freeze time in between and then use a skewer or fork and gently swirl for a swirled effect. Trust me these are gorgeous, really easy and pretty healthy!

Love Heart Nutella Tart

Valentines day is only a hop, skip and a jump away, and what’s more romantic then nutella, cream and strawberries? Here is the perfect dessert to have your beau eating out the palm of your hand 😉 plus, it’s so easy, so delicious and so perfect!

What you need:
Whipped cream
Ready roll puff pastry

What you do:
1) Pre-heat the oven to 200 C and line a flat baking sheet with parchment paper.
2) Roll out the puff pastry, using a heart shaped cutter, cut out as many yummy hearts as possible…maybe even different sizes.
3) Keeping a half a centimetre gap from the edge of each heart, layer on the strawberries and trickle on some nutella, then dash on some nuts.
4) Brush the edges of the pastry with some egg to get a crispy and deliciously golden edge.
5) Pop into the oven and bake for 20minutes or until golden brown and flaky.
6) Let it cool for 2 minutes, place on a plate dust with icing sugar and top with a swirl of whipped cream.
7) enjoy 😉

Trust me the hot nutella with the juicy strawberries and the cold whipped cream is a winning combination every time but it’s an extra special treat on valentines day!
